Grown high in the mountains of Cajamarca, northern Peru, this coffee comes from the Prosperidad de Chirinos cooperative — a community of more than 800 smallholder farmers dedicated to producing exceptional coffee while investing in a sustainable future for their families and communities.
Founded in 1968, the cooperative provides farmers with agronomic support, training, financing and educational opportunities, helping producers continuously improve both quality and sustainability. Many of the cooperative's initiatives focus specifically on empowering women and supporting the next generation of coffee growers.
In the cup, this washed coffee delivers everything I love about a well-balanced Peruvian coffee. Expect notes of crisp red apple, golden honey, dark chocolate and ripe plum. The washed process creates a clean, elegant profile where sweetness and fruit are beautifully supported by a smooth chocolate finish.
At Amstel Koffie, I roast this coffee to a carefully developed medium profile. Not too light, where acidity dominates, and not too dark, where bitterness masks the coffee's natural character. My goal is always balance — allowing sweetness, fruit and body to work together in harmony.
